Via San Saba 13A, Aventino

“Where knowledge catches fire, and fire takes form”

In the heart of Rome’s Aventino district, where history and innovation converge, Aura Academy unveils its temple of Advanced Culinary Education—a revolutionary project redefining gastronomic training paradigms.

More than just a school, this is a complete educational ecosystem: an ideas lab, taste workshop, and future academy introducing an innovative teaching method that blends cutting-edge technology with developing a creative mindset for tomorrow’s chefs and pastry chefs.

On July 1, two exclusive events will mark the inauguration:

  • Press event at 7:30 PM featuring an immersive tour through high-tech classrooms to experience the project’s vision, attended by faculty, Michelin-starred chefs, and industry leaders
  • Open Day at 4:00 PM for prospective students: an interactive experience with demonstrations, master meetings, and hands-on sessions

Aura Academy merges tradition and avant-garde in an environment where culinary art intersects with design, management, and communication, training not just cooks but complete professionals capable of navigating all facets of the food world.

The kitchens, designed with SC IMPIANTI Srl (leader in high-end restaurant spaces), are true “operational stages” equipped with the most advanced technologies to stimulate creativity and technical excellence.

The educational offering includes:

  • Three-Year Course in Culinary Arts (Bachelor of Science in Culinary Arts, 180 ECTS) combining technical training, management, communication, and international experiences
  • One-Year Professional Courses (Chef, Pastry, Baking, Pizza) for immediate workforce entry
  • Thematic Labs and Masterclasses focusing on the latest global gastronomy trends

Guiding students is an exceptional faculty:

  • Simone Maddaleni (Madeleine Roma) – Technical Director
  • Alessandro Pietropaoli (Chapter Roma) – Zero waste philosophy
  • Andrea Pasqualucci (Moma) – Michelin Star and sustainability
  • Koji Nakai – Asian-Italian fusion cuisine
  • Daniele Marè – Award-winning master baker (Gambero Rosso)
  • Francesca Minella – Expert in Michelin-starred pastry
  • Dario Nuti (Rome Cavalieri) – Excellence in pastry

Part of PLAS Group (leading education holding for 20+ years), Aura Academy delivers over 20,000 annual hours of cross-disciplinary training (food, communication, photography, management), establishing itself as an innovation hub.

The revolutionary Open Learning model (internationally patented) offers absolute flexibility: digital packs, streaming platforms, live sessions, and social rooms for tailored learning.

Here, cuisine goes beyond technique: students develop critical thinking, creative skills, and strategic vision to anticipate global gastronomy trends.
